My elderly uncle who lives in NY wants to add me as a joint signer on his checking account. His bank says I need to go to NY to be added; I live in AZ! Is there any way around this?

You can ask if they will send the documents for signature. This may require that you have everything notarized and/or actually sign the documents at another bank and in front of an officer. You may or may not get that kind of cooperation.
Rules require that banks know their customers. Many banks have a hard time doing that without meeting the person face-to-face. This policy though can vary from bank to bank. If they do allow you to sign it in AZ, expect to send them copies of ID and to have your credit checked.
