We opened a business account for our golf group, which is part of a large non-profit corporation. We opened a credit card account using the corporation's name. Our golfers have paid using our golf club name. The bank will not accept these checks. They want the "pay to" name changed. I have over a hundred checks to deposit. Can I just change the "pay to" and is this correct?

It sounds like the corporation is operating the golf club and using the golf club name in a form of "d/b/a" arrangement. If that's the case, you should check with the bank to see if it will allow you to write "[corporation name] DBA" above the payee information. In the future, make it clear to the golfers that checks should be issued to the corporation.
