Making a Deposit for Another

Is it illegal to have a person who is not on my account deposit a check, endorsed by me with a deposit slip with my signature on it, that reflects that I want cash back?

Is it not illegal, but will your bank will allow it? Many bank won't allow cash back from a deposit transaction except for the individual owning the account. They have adopted such a policy because they may not be able to verify that the cash back part of the deposit slip was actually completed by their depositor and not by the individual bringing in the deposit.
If you're making a deposit to a checking account, a cleaner way to go is to deposit the whole check, and then write a check on your account to your courier for the desired cash amount. As long as the courier has ID, the bank should cash it.
