If I deposit cash today, can I write a check against it on the same day?

The timing of your deposit matters here. Ask the bank when you make the deposit, when it will be available. While this seems like a no-brainer, for checking accounts your deposit of cash is to be available by the next business day. Friday evening's deposit may be on Monday's business day and your cash may not show until Tuesday.
Although you should not write a check on any funds you haven't confirmed are in your account, it also depends on where you write the check and how long it will take to clear, as to how safe it is. Essentially, if you are mailing the check, you should be fine. If you go to the bank on Saturday (which may not be a business day) and write your check, that Friday deposit may not have processed yet. Some banks can give you immediate credit on their systems and some can't.
