Changing Preprinted Addressee of Check

Can I change the name of the preprinted addressee that my bank puts on a certified check or money order?

Assuming you mean the Payee, on the "Pay to the Order of" line, the answer is no. That would appear to be an alteration of the check and a change that should be made by whomever issued the check. In this case, your bank issued the check. While they did so under your direction, if you want the payee changed, that should be done by voiding the existing check and reissuing a new one to the correct payee.
