I gave someone cheques that they have now certified, but have not cashed. How long do I have to wait for them to cash before I can try to get my money back?

If you were dealing with U.S. banking practice and laws, you, as drawer of a check that has been certified, would be able to make a claim in most U.S. states if 90 days had elapsed since the date of acceptance/certification, if the check were lost, stolen or destroyed. Unfortunately, we can't offer you guidance on Canadian banking practices or laws.
