I am not pleased with a roofing job. My husband paid them before I got home from work. On the original quote, the salesman did not write the color of the shingles I wanted. I believe the color that is on my roof is not what I picked out. As I said, my contract has a blank line where he should have written the color of the roof. Can I put a hold on the check at my bank, and for how long can I keep it on hold?

Assuming that the check has not already been paid by the bank, you can stop payment on it. As long as the roofer doesn't cash the check with a third party, such as a check cashing store, the roofer will be denied his money, and you will have his attention.
Of course, that means that you will not have paid an obligation that could result in a lien on your home. Therefore, it would be smart for all concerned to negotiate a settlement so that you can complete the payment and no lien will be filed. Make certain, if the final amount to be paid is lower than the amount cited in the contract, you get a written agreement for the lesser amount. If the check was cashed at the bank or elsewhere, you could be legally responsible for the check amount to a third party: a check cashing business, the roofer's bank, if he negotiated the check there and took any part of the funds, etc.
