I date a check for $1000 with today's date, but the money isn't going to be in the checking account until tomorrow, and the check is not cashed until next Tuesday. Does the bank verify the funds based on the date I have written on the check or do they just care if there are funds in my checking account when the person attempts to cash the check?

While it's usually not a good idea to write a check until you have money in your account, it's commonly done. The important thing is that funds be available in your account when the check arrives at your bank for payment. In fact, in most cases your bank won't even look at the date on your check.
