How long does a bank hold information on a cashier's check? Is it possible that a check cashed and cleared by a bank can't be traced?

Banks are supposed to retain information on cashier's check payments for at least five years. If the check you're concerned about was issued more than five years ago, it's very likely there won't be a record to document the payment.
